Happy Fall & Delicious Apple Cinnamon Loaf Cake

Do you ever hesitate to say goodbye to summer or do you jump into the land of pumpkin spice and embrace everything Autumn at the first sign of changing leaves and crisp Fall air? I tend to hang on to summer, as I love the long daylight hours and warmth of that summer sun, the bike rides and hikes and road trips unhindered by packing layers and more than just a few books to read on the way. Hannah embraces Autumn first thing, she is energized by the changing of seasons. She constantly inspires me as she creates a celebration of beauty through each season and holiday. She knows how to celebrate life so well and she encourages others to take time to celebrate too.

So these last couple weeks, whether from a desire to soak up the sun as long as possible and be outside or for the love of all things Fall, we've both been enjoying the crisp sunny days in our gardens harvesting the last of the cut flowers, at pumpkin patches and apple farms, and on walks with the kids.

Slowly but surely, with help of fresh pumpkin cinnamon donuts and the carving of pumpkins with family and friends, I'm embracing the changing of the seasons. I'm settling in to having hot soup on the stove, tea kettle at the ready and some books, games and movie ideas on hand for those chilly, dark evenings. My oldest daughter and I love historical fictions and we recently watched "The Guernsey Literary and Potato Peel Pie Society." That's a mouthful but the movie was brilliant and moving. Plus if you are lover of literature like us, you'll relate to the characters as they find joy over literary conversations and quips. But even if you're not an avid reader, there is much in this story to appreciate as the neighbors and families on the island of Guernsey band together to get through hard times. Anyways, this in not a movie review, haha! I rarely watch any tv so I guess when I find something on there worthy of my attention, I want to share it!

Okay, back to the baking! What better to have on hand for a game night, movie night, friends or neighbors who either stop by for a visit or could use a delivery of sweetness and joy than something baked with love out of our kitchens. Hannah can bake pretty much anything from pies to any kind of cookie to dutch babies and much more. She brings joy to all around her through her delicious creations. I usually stick with simpler recipes and play around with gluten free options so that's what I'm doing today with a cinnamon apple loaf. I can't wait to include some of the fresh apples from this beautiful season as well as our Sisters Red Delicious Apple Chips. I'll have to make sure I have multiple bags of Sisters Fruit chips on hand for when my friends and neighbors stop by because they'll want some straight out of the bag in addition to a taste of the apple cake! My absolute favorite thing about our Sisters Fruit Chips is the delight of sharing them!

As we enter this season of gratefulness and giving may you find joy in the little things and spread love and care to neighbors, friends and family.

I wish you I could have you all over right now! The house smells amazing of warm cinnamon and baking apples and cake and fall 🍁 This recipe came out amazing! I subbed the 1 1/2 cups flour for my homemade gluten free 1:1 flour mix. I usually make a container of it every few months to have on hand. I use one part oat flour, one part brown rice flour and one part arrowroot starch/flour. I've heard this works for any two flours plus a starch to make 1:1 gf baking flour. I don't love the taste of tapioca starch and it's tough to find a gluten free flour substitute without it which is why I started making my own. Anyways, I also used almond milk instead of regular milk. I got a little nervous when I added the almond milk because a change in the texture of the batter, but I was pleasantly surprised it had absolutely no negative affect on the final product. This loaf cake came out of the oven steaming hot and looked and smelled so good. After a few photos the girls and I dug into a piece and all agreed it tastes delicious!
