Cinnamon Apple Oatmeal Cookies

If you can’t tell, we LOVE the Fall. In fact, the only thing that we might love more than Fall is Fall-Baking! As a new harvest of apples arrives, there are so many delicious goodies to be made (and eaten)! After a long, hot summer, we always look forward to apple pie, caramel apples, apple sauce, apple butter, mulled apple cider, and so many other treats. 

This month, we decided to share our spin on a fall-favorite: Cinnamon Apple Oatmeal cookies. Our Cinnamon Apple Chips add the perfect amount of sweetness and spice to an already-delicious cookie, and we can’t wait for you to try them!

Ingredients: 

  • 1 Bag of Sister's Cinnamon Apple Chips

  • 1 Egg

  • 2 1/2 cups Oats, Old Fashioned

  • 1 tsp Baking soda

  • 14 1/2 tbsp Brown sugar, light

  • 1/2 tsp Nutmeg

  • 2 tsp Cinnamon

  • 1/2 cup Cinnamon chips

  • 2 tsp Cornstarch

  • 1 3/4 cup Flour

  • 1/4 cup Sugar

  • 1 tsp Vanilla extract

  • 13 tbsp Butter

Directions: 

Preheat oven to 350 degrees. Cream butter and sugars together until light and fluffy, about 2-3 minutes. Mix in egg and vanilla extract.Add cinnamon, flour, cornstarch and baking soda to a medium sized bowl and combine. With the mixer on low speed, add flour mixture to butter mixture. Stir in old fashioned oats and cinnamon chips. Dough will be thick. Stir in apple chips, all crunched up. Make dough into balls of about 2 tbsp. Flatten them out a bit and place on cookie sheet covered with parchment paper or a silicone baking mat. 

Bake for 10-11 minutes. They should be slightly golden on the edges and look a little underdone in the center. Remove from oven and allow to cool for a couple minutes before putting on a cooling rack. The center of the cookie will finish cooking as it cools.
