3-Ingredient Mango Coconut Chia Seed Pudding
Chia seed pudding is super easy and makes a delicious, healthy breakfast or snack — and best of all, there is NO cooking required! Simply stir ingredients together, let rest overnight … and voila! Enjoy your pudding by itself, topped with a bit of fresh fruit or as a layered parfait (try our Mango Coconut Parfait recipe!)
Ingredients
2 Cups Unsweetened Coconut Milk
6 Tablespoons Chia Seeds
Instructions
Combine all ingredients in a container. Stir well, cover and refrigerate for 2 hours. Stir again and refrigerate for an additional 10 hours. Your pudding will keep for up to 7 days in the fridge). Enjoy!
