Northwest Holiday Biscotti

NORTHWEST HOLIDAY BISCOTTI

INGREDIENTS
Cookies
•  2 1/4 cup flour
•  1 1/4 cup sugar
•  1/2 tsp baking powder
•  1/2 cup coursely chopped hazelnuts
•  1 cup Sisters Fruit Co. Northwest Dried Fruit Blend
•  1/4 tsp salt
•  1/2 tsp cinnamon
•  1/4 tsp nutmeg
•  1/4 tsp cloves
•  1/4 tsp ground ginger
•  3 Eggs
•  2 Tbsp butter (melted)
•  1/2 tsp vanilla extract
Optional Topping
•  1 1/2 cup white (or dark) chocolate
•  1/4 cup finely chopped hazelnuts

DIRECTIONS
1. Preheat oven to 350 degrees
2. Grease and lightly flour baking sheet
3. Mix dry ingredients
4. In a separate bowl, gently blend eggs, butter and vanilla
5. Add liquid to well in center of the flour mixture
6. Stir at first, and then using hands, work together until a dough is formed. Shape into a loaf and divide in half.
7. On a lightly floured surface, roll dough into 2 cylinders, each 1 inch high, 2.5 inches wide and 8-10 inches long and carefully place on the baking sheet.
8. Bake 30 minutes until *lightly* brown on top.
9. Carefully remove from the oven and slide onto a cutting board
10. With a sharp knife, slice the cylinders diagonally into 3/4 inch slices and place them cut side down on the baking sheet.
11. Bake for 10 more minutes.
12. Cool cookies on wire racks.
13. Melt white chocolate, in a microwave-safe bowl: heat up for 30 seconds, and stir. Repeat both of these steps 3-4 times, or until smooth.
14. Dip cookies in melted chocolate, smoothing with a spoon. Sprinkle hazelnuts on on top. Set aside to cool.
