Pacific Northwest Summer Salad
This Northwest salad recipe is a must in your summer salad-rotation! Fresh baby greens, peppered wild smoked salmon, our premium dried Northwest Fruit Blend, juicy blackberries, creamy blue cheese crumbles & crunchy toasted hazelnuts are paired up with a tangy strawberry vinaigrette for a delicious salad bursting with the uniquely wonderful flavors and spirit of the Pacific Northwest.
STRAWBERRY BALSAMIC VINAIGRETTE
Ingredients
1/4 Cup Rosé Balsamic Vinegar (white or regular Balsamic can also be used as a substitute)
1/4 Cup Olive Oil
1/4 teaspoon Dijon Mustard
Salt & Pepper (to taste)
Instructions
Combine syrup, vinegar, and mustard. Slowly pour in the olive oil. Add a dash of salt and pepper. Whisk thoroughly.
PACIFIC NORTHWEST SUMMER SALAD
Ingredients
6 Cups Baby Greens
1/2 Cup Sliced Fresh Strawberries
1/2 Cup Fresh Blackberries
4 oz Smoked Peppered Wild Salmon
3/4 Cup Blue Cheese Crumbles
Handful of Freshly Sliced Red Onions
1/2 cup Toasted, Chopped Hazelnuts
Strawberry Vinaigrette (see recipe above)
Optional Topping: Sisters Fruit Co. Red Delicious Apple Chips
Instructions
Toast chopped hazelnuts on a medium-high heat setting, in a pan on the stovetop, while stirring for about a minute. Set aside to cool. Gently toss the salad greens with the fresh berries, sliced onions, dried fruit blend, and cheese crumbles in a large bowl. Break the smoked salmon into large pieces and add those to the bowl along with the chopped hazelnuts. Pour dressing over salad. Combine gently. Serve with apple chips, if desired. Enjoy!
