Tropical Crunch Granola

Make up a batch to enjoy on it’s own, as a cold cereal with milk, or simply sprinkle a bit on your yogurt to add some tasty tropical crunch!

Tropical Crunch Granola

Ingredients
- 3 cups rolled oats
- 1/3 cup coconut oil
- 1/3 cup honey
- 1/2 cup pecans, chopped
- 1/2 cup sliced almonds
- 1 cup Mango Chips, crushed
- 1 1/2 cup Dried Coconut Pineapple
- 1 cup coconut flakes

Instructions
1. Preheat oven to 300 F and line a large baking sheet with parchment paper. Place the rolled oats in a large bowl, then in another bowl, microwave the honey and coconut oil together for about 30 seconds. Stir. Pour the mixture over the oats and stir until completely coated. Add chopped pecans.

2. Spread the granola mixture in a even layer on your baking sheet, then place in the oven for 30-35 minutes, stirring after 15 minutes. The granola can burn quickly so keep an eye on it! Remove the granola from the oven and allow it to cool for 10 minutes before stirring in the mango chips, coconut pineapple, and coconut flakes.

3. Once completely cool, store it in an airtight container at room temperature for up to 10 days.
